Fresh Blueberry Morning Bread

vegan, makes 16 squares in a 9″ square casserole dish

Ingredients

  • 2 cups whole wheat flour (or use half white, half whole wheat for a silkier texture)
  • 1/2 cup agave syrup
  • 1 cup soy milk, vanilla
  • 1/2 orange juice +1/2 tsp orange zest (or just use 1/2 cup water)
  • 1/3 cup vegetable oil
  • 2 Tbsp chia seeds
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 Tbsp baking powder
  • 2 tsp apple cider vinegar
  • 1 1/4 cups fresh organic blueberries

optional: 1/8 tsp cayenne and/or 1/2 tsp ginger powder (for a spicy accent)

Directions:

1. Combine the dry ingredients in large mixing bowl.

2. Fold in wet ingredients. Fold in blueberries last.

3. Pour mixture into greased baking dish.

4. Top with a sprinkle of chia seeds and a few leftover berries.

5. Bake at 350 degrees for 30 minutes.
