Celebrate Cinco de Mayo with a Strawberry Margarita Granita

We’ve already posted a few a delicious dishes to help celebrate Cinco de Mayo  Now we have something to help wash them down! It’s a strawberry margarita granita that will know your socks off! It’s made with fresh strawberries, lime juice and of course tequila so you’ll want to keep the kiddos away from this one. Of course it would be incredibly easy to make this non-alcoholic, just omit the tequila.

Strawberry Margarita Granita

What you’ll need:

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 limes – juiced
  • 16 ounces strawberries – hulled and pureed
  • 1/4 cup tequila

What to do:

1. Into a small pot add sugar and water. Bring a boil. Continue cooking until mixture thickens {making a simple syrup}. Remove from heat and refrigerate until completely cool.

2. Into your ice cream machine add all ingredients. Blend until it forms a slushi type consistency. NOTE: if you do not have an ice cream maker, place all ingredients into a deep sided dish and place into freezer. Stirring every so often. Leave in freezer until it’s to a slushi type consistency.

Garnish with lime wedges or strawberry slices.
