Carrot Cake With Cream Cheese Frosting and Caramel in a Jar

Do you need a last-minute dessert? Or just craving something sweet and want instant gratification? Do you like Carrot Cake? Well this is for YOU. You know we’re coo coo for baking in jars around the Family Kitchen lately. And rightly so, it’s an adorable presentation and it’s just plain fun. So I thought I’d take it a step further and try baking in a jar in the MICROWAVE! That’s right in the microwave.

My microwave is pretty much just used to reheat food or melt/soften butter but now you bet it will be used far more often ; ). It literally took ONE MINUTE that’s right, one minute. It takes longer to mix up the batter than it does to cook it.

I used a boxed carrot cake mix and jazzed it up by adding in some grated carrot for texture {you can omit if you’d like}. I also used my Grandma’s from scratch cream cheese frosting and then drizzled caramel sauce on top. It was a dreamy decadent dessert.

NOTE: again, all of MY dessert in jars recipes have not been tested for long term storage. They are meant to be enjoyed immediately.

What you’ll need:

  • 1 box of carrot cake cake mix {+ ingredients to make}
  • cream cheese frosting
  • caramel sauce

What to do:

1.  Mix cake batter according to package directions.

2. Spray a 4 ounce mason {canning} jar with cooking spray. Fill jar not quite half way with batter {do not overfill}. Place in microwave and cook on high for 30 seconds. At end of 30 seconds, cook for additional 30 seconds. CAREFULLY remove from microwave and allow to cool.

3. Frost with cream cheese frosting and drizzle caramel sauce on top.
