There is something so cozy and warm about tortellini soup. I LOVE making it for my family because it comes together in a flash and always hits the spot on cold winter nights. Also, since I am just weeks away from welcoming a new baby I am not in the mood to stand for hours making complicated soups, I like to keep things simple and delicious. Here is one of our simple and favorite soups for winter, we hope you enjoy it has much our family does!
Simple Tortellini Soup
serves 2 to 4
Ingredients
- 4 cups low-sodium chicken broth
- 3 tablespoons crushed tomatoes with juices
- 2 cups fresh cheese tortellini
- 6 leaves fresh or frozen basil, torn
- 1 handful baby spinach, washed, dried and roughly chopped
- Parmesan cheese for serving
Directions
1. In a medium size pot over low heat add the chicken broth and tomatoes and bring to a low simmer for 5 minutes, stirring lightly a few times.
2. Add in the cheese tortellini, torn basil leaves, and chopped spinach and stir until the tortellini is cooked and floats to the top.
3. Serve in bowls topped with a light pinch of Parmesan cheese.
