Salted Popcorn and Almond Butter Bark Recipe

By Brooke McLay

I have had to pull together so many desserts for summer parties, and potlucks, and end-of-summer picnics, and start-of-school playdates that I’m starting to tire of brownie bites and peanut butter bars. Don’t get me wrong, there’s nothing wrong with all of those things, but they take time to bake, and aren’t the world’s most guilt-free eat. So, I conjured this surprisingly quick and delish little snack. Feeds a whole crowd, takes just minutes. Plus, it looks and tastes like a party, so you can tote it anywhere that needs a little kick in the fun bucket. And, no. Before that last sentence existed, there was never such thing as a fun bucket. But now there is, so let’s fill it with Almond Butter Bark and kickstart the party!

Salted Popcorn and Almond Butter Bark

Ingredients

  • 1 cup white chocolate chips
  • 1 cup dark chocolate chips
  • 1 cup butterscotch chips
  • 1/2 cup almond butter
  • 4 cups popcorn
  • 1 cup pretzels
  • 1/4 cup candy-coated sunflower seeds

Directions

In a microwave-safe container, melt all chocolate chips. Whisk in the almond butter. Pour over popcorn and preztels, then turn out onto a parchment-lined baking sheet. Sprinkle with sunflower seeds. Allow to cool completely before cracking and serving.
