Pork Tostadas with Cucumber Lime Salsa Recipe

My husband’s favorite Mexican treat for me to make at home is tostadas. Last night I made our tostadas with pork and a fresh cucumber lime salsa. I topped it with guacamole before serving. It was quick, simple and so tasty. I didn’t get a picture of it, but last night I also got the perfect idea for a kid friendly tostada – a tostada sandwich. Tostadas are really fun for adults, but sometimes, it’s hard for little kids to balance all those goodies on top of their tostada shells. So last night I added another tostada shell with beans spread on it to the top of my son’s tostada, making a little sandwich. It was much easier for him to handle, and fun.

Pork Tostadas with Cucumber Lime Salsa

Ingredients

For the pork

  • 1 lb pork, sliced (I used Pork Loin Sirloin Cutlets)
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried cilantro
  • salt and pepper
  • olive oil

For the salsa

  • 1 cucumber, diced
  • 3 diced tomatoes
  • 1 small bunch fresh cilantro, roughly chopped
  • the juice of 1 lime
  • salt and pepper

For the beans

  • 1 – 15 oz can re-fried beans
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Shredded cheddar cheese
  • Guacamole and/or sour cream (optional)
  • Tostada shells

Method

1. Combine sliced pork and spices. Preheat a large skillet. Drizzle with olive oil. Add pork and brown on all sides.

2. Combine all ingredients for salsa and stir to combine, set aside.

3. Combine beans and spices and heat in microwave or small saucepan.

4. Spread tostada shell with re-fried beans, sprinkle with cheese, top with pork and then cucumber salsa.
