Peanut Butter and Jelly Bars Recipe

Secret ingredient: beans! Yup, there is an entire can of garbanzo beans in this recipe. But trust me you can not taste it at all! You do not even need to mention it to anyone why may hate beans. The beans blend perfectly with the rich peanut butter. Nutrition without the bean taste!

Secret Ingredient PB&J Bars

vegan, makes bars to fit any 9″ or 10″ round or square dish

Ingredients

PB layer:

  • 1 1/2 cups canned garbanzo beans, drained and rinsed in hot water
  • 1 cup salted peanut butter
  • 1/4 cup agave or maple syrup
  • pinch of salt
  • 1/3 cup non-dairy milk (try rice, almond or soy)

Cracker Nut Crust:

  • 1 cup seeded crackers or pretzels
  • 1/2 cup raisins
  • 1/2 cup any nut (sliced almonds were used)
  • 1 Tbsp chia or flax seeds

Jelly layer:

  • 1/2 – 3/4 cup any flavor jam or jelly, warmed in microwave to silky pour-able state

Directions:

1. Add the cracker crust ingredients to a blender of food processor. Process until fine and crumbly. Pour and set aside.

2. Add all the peanut butter layer ingredients to a blender or food processor. Blend until smooth. Set aside.

3. Heat your jam until it is easy to pour.

4. Assemble! Ass a thin 1/8 inch layer of crumbly cracker crust bits to your dish. Press down very well. The raisins should be a bit sticky and chewy which helps things stick together. Reserve about 1/3 cup of this crumb mixture for the top. Carefully pour the peanut butter mixture over top the crust. Smooth out pb. You can now chill this for about 15-30 minutes if you’d like – or if you want to take a chance and pour very carefully, pour the warmed jam over top. Smooth. Lastly, add the top layer of crumbles. Chill for at least an hour – overnight is best! Serve by slicing into small squares. The bars are very soft in texture so they should be sliced carefully.

Tip: If you’d like firmer bars, add a 1/4 cup of melted coconut oil to the peanut butter mixture.
