My Lucky Shamrock Dream Dip is one that I’m sure leprechauns are feasting on at all their parties. Bright green, super creamy and full of flavor. This festive green recipe is perfect served next to your tall mugs of Guinness beer or Irish Whisky bevies. Grab this easy, inexpensive recipe and start your St Patrick’s Day party! Heck, you don’t even need any guests – more dip for you!..

Shamrocks and leprechauns. And four leaf clovers and rainbows and pots of gold and luck of the Irish and all that fun stuff that makes us remember to wear green on St Patrick’s Day. And I’m sure you already have a whole host of delish green recipes planned – but you can squeeze in this fast recipe – I’m sure of it! You won’t believe how yummy it is.

It’s kinda like a cross between guacamole/bean dip/spinach dip.

..I think that’s why it’s so dreamy.

When I first made this dip I kinda ate the entire bowl – guilt free, I might add..

Good Stuff Dip. This dip is rich in protein from the bean, healthy fats from the avocado, antioxidants from the spinach – it is also high in fiber. It is vegan and dairy-free.

..and no, there are no actual shamrocks in this dip. But if you find any lucky, edible four leaf clovers – I’m sure you could blend them in as well … at the discretion of your favorite leprechaun.

Lucky Shamrock Dream Dip

vegan, makes about 1 1/2 cups (double recipe to feed a crowd)

Ingredients

  • 1/2 cup cannellini beans, drained
  • 1/2 small ripe avocado
  • 1 1/2-2 cups raw baby spinach
  • 2 tsp red pepper flakes
  • 1/2 lemon, juiced
  • pinch of sea salt
  • a few grinds of fresh black pepper

Directions

  1. Add all the ingredients to a food processor.
  2. Blend.
  3. Serve at room temp – or chill.
  4. If you chill before serving add a few slices of lemon over top the dip so it stays bright green!
  5. Happy Shamrock eating!! sort’ve.
