Easy Cheezy Pecan Kale Recipe

You may have your entire Thanksgiving feast all planned and prepared — but did you remember the greens? And I don’t just mean green beans. It’s always nice to have a big bowl of greens on the table. And instead of a basic garden salad, try a super trendy kale salad this year — my Cheezy Pecan Kale is dark and leafy with a tender yet robust bite. This salad can be made in a flash and has a very mild, savory-zesty flavor that will mesh well with the complex, rich flavors of Thanksgiving. Plus get my technique for flash-steaming kale to perfection!

Cheezy Pecan Kale

vegan, makes 1 big salad bowl-ful

Ingredients

  • 1 large bunch of kale, remove thick stems/tear into bits
  • 1/2 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1-2 Tbsp maple syrup
  • a few grinds of fresh black pepper
  • optional: 1 tsp garlic powder
  • 1/2 cup chopped raw pecans
  • steaming double broiler

Directions

1. Start your double broiler. Flash steam your kale for literally just a few seconds. You will know it is ready not by the texture — but by the color. The instant you notice the color deepen to a darker shade of green — remove it from the steam. You don’t want to fully wilt the kale — just steam it gently to soften the fibers.

2. Next, toss the kale in the olive oil, vinegar and maple syrup. Add the pepper and optional garlic as well. And last, sprinkle on the nutritional yeast and do a final quick toss.

3. Sprinkle the chopped pecans over top and serve! This salad will hold up very nicely at dinner and will not get soggy like other dressed salads might. Plus kale is super healthy and delicious!!
