Cucumber Apple Tuna Salad Sandwich Recipe

My kids ask for tuna regularly, but I feel like a can of fish with a hunk of mayonnaise stirred into has got to have some better mix-in’s to bulk up the meal with a proper dose of fruits and veggies. So this week, when my kids asked for their usual, I decided to chop in a few extra ingredients, turning a single can of tuna into a meal for four which wasn’t just filling, it was delicious! Here’s how to make give your own plain-old tuna sandwich a serious makeover, in minutes!

Cucumber-Apple Tuna Salad


  • 1 can tuna, drained
  • 1/2 green apple, finely chopped
  • 1/4 cup cucumber, finely chopped
  • 2 tablespoons purple onion
  • 2 tablespoons chopped cashews (optional)
  • 1/3 cup mayo or Vegenaise
  • salt and pepper to taste
  • Sprouts for garnish


  1. Mix all ingredients together in a large bowl (except the sprouts). Spoon on top of your favorite grainy bread. Top with sprouts and serve immediately.
