Crispy, Chewy Peanut Butter and Granola Bites Recipe

I’m a fan of crispy and chewy. I’m also a fan of peanut buttery and crunchy. These simple no-bake snacks fit the bill on all counts, and are easy to mix up for a last minute outing, party, picnic or lunchbox treat. (A great alternative to packaged granola bars!) They’re also infinitely versatile – try any grainy cereal in place of (or as well as) the Rice Krispies, and use any kind of granola – I like homemade, with lots of nuts and seeds. Keep the marshmallow mixture over low heat – peanut butter tends to scorch.

You can make these gluten-free if you seek out gluten-free crispy rice cereal and granola – or make your own granola using gluten-free oats.

Crispy, Chewy Peanut Butter & Granola Bites

Ingredients

  • 3 cups crispy rice cereal
  • 3 cups low-fat granola
  • 2 Tbsp. butter
  • 1/4 cup peanut butter
  • 1/2 bag large marshmallows

Directions

  1. Place the rice cereal and granola in a large bowl that has been sprayed with nonstick spray. In a medium saucepan, melt butter, peanut butter and marshmallows over low heat, stirring often until smooth. Pour over the cereal mixture and stir to coat completely.
  2. Roll the mixture into balls and set on a baking sheet. Set aside to cool completely. Makes about 2 dozen.
