I’m a fan of crispy and chewy. I’m also a fan of peanut buttery and crunchy. These simple no-bake snacks fit the bill on all counts, and are easy to mix up for a last minute outing, party, picnic or lunchbox treat. (A great alternative to packaged granola bars!) They’re also infinitely versatile – try any grainy cereal in place of (or as well as) the Rice Krispies, and use any kind of granola – I like homemade, with lots of nuts and seeds. Keep the marshmallow mixture over low heat – peanut butter tends to scorch.
You can make these gluten-free if you seek out gluten-free crispy rice cereal and granola – or make your own granola using gluten-free oats.
Crispy, Chewy Peanut Butter & Granola Bites
Ingredients
- 3 cups crispy rice cereal
- 3 cups low-fat granola
- 2 Tbsp. butter
- 1/4 cup peanut butter
- 1/2 bag large marshmallows
Directions
- Place the rice cereal and granola in a large bowl that has been sprayed with nonstick spray. In a medium saucepan, melt butter, peanut butter and marshmallows over low heat, stirring often until smooth. Pour over the cereal mixture and stir to coat completely.
- Roll the mixture into balls and set on a baking sheet. Set aside to cool completely. Makes about 2 dozen.
