Chia Seed Spelt Citrus Banana Bread Recipe

I’m a sucker for banana bread. And for my Chia Seed Spelt Citrus Spelt version I’ve pumped up the nutrition and flavor volume. This is an excellent breakfast tea cake. It is infused with nutty spelt grains, energizing orange citrus, omega-rich and fiber-rich chia seeds, potassium-rich bananas, rich satisfying peanut butter, sassy citrus and more. Chia seeds are the star ingredient in this banana bread recipe. Well, besides those lovely ripe bananas of course. But chia seeds act as a magical egg replacer. Because they absorb liquid and plump up as the bread bakes, you get a very nicely textured bread that tastes like there are eggs in it – when there are none. Nutty Chia Seed Spelt Citrus Banana Bread

fills one square 8″ baking dish (or use a bread loaf pan – or muffin tins)

Ingredients:

  • 1 tsp baking soda
  • 1 tbsp baking powder
  • 3/4 tsp salt
  • 3 Tbsp chia seeds
  • a few dashes of cinnamon + a dash of cayenne
  • 3 ripe banana, mashed (use 1/2 banana for top slices – garnish)
  • 1 Tbsp grape seed oil (any veg oil)
  • 2 Tbsp creamy peanut butter
  • 1/2 cup soy milk, plain
  • 1/2 cup water
  • 1/3 cup agave syrup
  • 1 Tbsp orange citrus juice
  • 1 1/2 cups spelt flour
  • 1 Tbsp apple cider vinegar
  • 1/4 cup chopped citrus (I used satsumas)
  • 1/4 cup chopped walnuts or peanuts
  • optional: grind of citrus zest

Directions:

1. Preheat oven to 350 degrees.

2. Grease you baking dish and set aside.

3. Combine the peanut butter, soy milk, water, baking soda, baking powder, agave, juice, zest, oil, cinnamon and cayenne, banana, chia seeds and salt in a large mixing bowl. Stir until the banana and peanut butter blend into the liquid.

4. Add in the spelt four. Fold in the nuts, chopped citrus, and apple cider vinegar. The mixture will foam a tad from the vinegar reacting with baking soda/powder.

5. Pour into baking dish top with banana slices.

6. Bake at 350 degrees for 24 minutes – or until toothpick inserted in center comes out clean.

7. Cool and serve warm or store in fridge and serve chilled.
