Now that Easter is over what do we do with all of the leftover candy? Make brownies of course. Brownies are a wonderful vehicle to stuff with just about anything but I’m especially fond of stuffing them with chocolate. Cadbury Eggs are perfect for this. I like to cut them in half and add them near the end of baking so that you can see them sitting a top almost floating in the brownie itself. They’re just warm enough so that they melt right in your mouth. Baking them in mini muffin pans also makes these a bite sized treat so you don’t have to worry about overindulging.
What you’ll need:
- 1 – 18.3 ounce box of brownie mix + ingredients to make
- 18 mini cadbury eggs – halved
What to do:
1. Preheat oven to 350 degrees. Spray a mini muffin pan with non-stick cooking spray.
2. Mix brownie mix according to package directions. Fill each muffin well 1/2 full of batter. Bake for approximately 8-10 minutes until slightly set and then place a Cadbury egg half on top and slighly press into batter. Continue cooking for additional 4-5 minutes until brownies are done and chocolate eggs are slightly melted.
