Buffalo Chicken Sandwiches Recipe

I’m a latecomer to the Buffalo Chicken scene.  My husband is not a big fan of buffalo wings, so I’ve never really given them a go in my kitchen.  Until today. Today I though I’d try to turn a bit of leftover baked chicken into a freakishly delish sub sandwich.  Hello, mama!  It worked and I’m hooked.

This sandwich is quite simple to make, especially if you have some already cooked chicken in your fridge.  Because it doesn’t require the frying of fatty little chicken wings, this is a great, healthy alternative to traditional chicken wings.  All the same flavors, a whole lot less of the chubby stuff.

Buffalo Chicken Sandwich

Ingredients

  • 2 cups cooked chicken, diced
  • 1/2 cup buffalo wing sauce
  • 1/2 cup cheddar cheese
  • 1/4 cup blue cheese dressing
  • 2 hogi rolls

Directions

1. In a small bowl, combine the chicken and buffalo wing sauce until the chicken is well coated with the sauce.  Open the hogi rolls and spread the blue cheese dressing onto one side of the buns.  Place 1 cup of the chicken into each roll, sprinkle with cheddar cheese, then transfer to a baking sheet.  Bake in an oven preheated to 425 degrees for 10-12 minutes, or until the cheese is melted and the edges of the sandwich are golden brown.  Serve immediately with celery sticks and potato chips.  Enjoy!
