I’ve recently started trying to cut carbs out of my breakfast routine. But, I don’t like to eat my eggs on their own. I like to scoop them onto something. Usually that something is toast, but recently, it’s been a ripe avocado. I halve the avocado, remove the pit, and add a simple poached egg. With a small drizzle of olive oil and a pinch of sea salt it is the perfect breakfast! It is full of healthy fats and is enough to hold me all morning. That is more than I can say when I eat my eggs with toast. This easy recipe is a snap to make. even on the busiest of mornings. Grab some avocados, let them ripen, and your breakfast is almost ready!
Poached Egg in Avocado Boat
Ingredients:
- 1 large egg
- 1 half avocado, pit removed
- 1/2 teaspoon extra virgin oil or melted coconut oil
- 1 pinch sea salt
Method:
1. Bring a large pot of water to a boil. Once it is rapidly boiled hold the egg close to the surface and crack it into the water. Don’t touch the egg while it boils. Use a gentle slotted spoon to lift the poached egg out of the water once the whites are completely opaque and the center seems somewhat set. About 4 minutes or a little more.
2. Carefully plop the egg in the avocado center. Drizzle with olive oil and add the pinch of salt. Enjoy!
