This Great Cake Contest entry was submitted by bekahsbakin from Fairbury, Illinois: This is a spice cake with cream cheese flavored buttercream frosting.
What you'll need
- 2 cups all-purpose flour
- 1 1/3 cups sugar
- 1 tablespoon plus 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/3 cup shortening
- 1 cup milk
- 1 teaspoon vanilla
- 2 large eggs
- Easy Caramel Icing, below
PREPARATION
- Sift together flour, sugar, baking powder, salt, cinnamon and nutmeg. Add shortening, milk, and vanilla; beat on slow to medium speed of electric mixer for 2 minutes. Scrape sides and bottom of mixing bowl several times. Beat in eggs and continue to beat
How to make it
- This is a large egg pan on top of a 13X9 pan, stacked frosted in between. I then frosted it with brown buttercream frosting and covered with a paper towel and used a 4" foam paint roller to roll over the paper towel to give it the 'skin' look. I used the small egg pan for the legs and put them partially inside sugar cones. The bones are fondant.
- I then airbrushed it in places with a darker color for the 'caramelized' look. The stuffing is cut up white and spice cake. The lettuce and vegetables are fondant and chocolate clay. Places in a foil roasting pan.
