Tuna and Cannellini Bean Salad

Add a can of white beans to tuna and some fresh add-ins and you've got a heart-healthy zesty Mediterranean dish everyone can love.

What you'll need

  • 1 pouch or can (5 oz) tuna
  • 1 garlic clove
  • 1 Tbsp. lemon juicer
  • 2 Tbsp. olive oil
  • 1 can (16 oz.) cannellini beans, drained and rinsed
  • 1/2 red pepper cut in cubes
  • 1/4 cup chopped red onion
  • Fresh basil, chopped, to taste
  • Salt and pepper, to taste
  • 1/2 tbsp lemon zest

Notes:

Yields 4 servings

How to make it

  1. Mince garlic and mash to a paste with the back of a spoon.
  2. Mix garlic paste with lemon juice, salt and pepper and slowly whisk in olive oil.
  3. Toss red pepper, onion, and beans together.
  4. Break apart tuna and mix into bean mixture.
  5. Add dressing and toss well.
  6. Add basil just before serving.
  7. Serve at room temperature.
