What you'll need
- 1 bag (16 ounces) frozen sweet corn kernels
- 8 ounces cream cheese, softened
- 1 cup Monterey jack cheese, shredded
- 1/2 cup milk
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Variations:
Add a 7 ounce can of green chilis during prep and reduce the sugar to 1 tablespoon for a delicious Green Chili Corn Pudding.
How to make it
- Place all ingredients in a slow cooker. Mix well until combined. Cover and cook on low for 2 hours and 45 minutes. Remove the cover and cook for an additional 15 minutes.
