When I was asked to write a recipe for slow-cooker oatmeal, I was less than thrilled. Slow-cooker oatmeal just doesn't sound appealing and I pictured waking up to thick clumps of mush. To my surprise I was wrong! The secret is in the oats, steel cut oats - that is. Warm, sweet, and comforting, this slow-cooker coconut oatmeal is the perfect breakfast with no effort!

What you'll need
- Butter
- 8 cups water
- 2 cups steel cut oats
- 1 can (14 ounces) coconut milk
- 1/2 cup honey or light brown sugar
- 1/2 cup shredded coconut flakes
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Fresh fruit, dried fruit, nuts, or roasted coconut flakes for garnish
How to make it
- Rub the interior of the slow cooker with butter. To the slow cooker, add water, oats, coconut milk, coconut, honey or sugar, and salt. Cover and cook on low for 8 hours.
- Once finished, stir in vanilla extract. Serve in bowls and garnish with fruit, nuts, or coconut flakes.
