What you'll need

  • 2 ½ cups of ricotta
  • ½ cup grated Parmigianino cheese
  • ½ cup of flour (reserve 2 tablespoons for dusting)
  • 1 beaten egg
  • ¼ teaspoon salt to taste
  • Serve with tomato sauce

How to make it

  1. Mix all the ingredients together in a bowl.
  2. Once you've gotten your hands dirty by mixing everything together, dust your work surface and hands with flour.
  3.  Roll the mixture on the work surface to form a long snake that has around the same thickness as your index finger. Do this to the entire mixture
  4. Take the side of a fork and cut the snake into ½ inch pieces.
  5. Boil a pot of water and add the gnocchi. Stir gently and once the pieces pop up to the top and float, they're done. This should take two-to-three minutes. You're done! Serve with your favorite tomato sauce!
