Try this Spanish-inspired dinner dish. It makes a great brunch dish too since it can be served warm or at room temperature.
What you'll need
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 ounces chorizo sausage, thinly sliced
- 2 tablespoons olive oil
- 4 large (1-1/2 pound) red potatoes, sliced 3/8-inch thick
- 1 onion, chopped
- 1/2 cup grated Mexican blend or cheddar cheese

Use frozen shredded potatoes.
Use frozen chopped onions.

Variations:
Substitution(s): Any hot or sweet sausage may be used instead of chorizo.
How to make it
- In small bowl whisk eggs, milk, salt and pepper to combine; add chorizo. Heat broiler.
- In 12-inch non-stick skillet over medium-high heat heat oil until shimmers. Add potatoes and cook 10 minutes, turning occasionally. Add onions and cook, flipping over potatoes occasionally, 5 minutes. Add 1/3 cup water, cover pan with lid or foil and continue to cook about 8 minutes, turning potato mixture occasionally, or until potatoes are fork-tender and golden.
- Pour egg mixture on top of potatoes, reduce heat to medium low. Cook about 4 minutes or until eggs are nearly set. Sprinkle with cheese and place under broiler 5 minutes until cheese is golden and eggs are set.
