Potato-Chorizo Frittata

Try this Spanish-inspired dinner dish. It makes a great brunch dish too since it can be served warm or at room temperature.

What you'll need

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 ounces chorizo sausage, thinly sliced
  • 2 tablespoons olive oil
  • 4 large (1-1/2 pound) red potatoes, sliced 3/8-inch thick
  • 1 onion, chopped
  • 1/2 cup grated Mexican blend or cheddar cheese

Use frozen shredded potatoes.

Use frozen chopped onions.

Notes:

How kids can help: They can make up the egg mixture.

Variations:

Substitution(s): Any hot or sweet sausage may be used instead of chorizo.

How to make it

  1. In small bowl whisk eggs, milk, salt and pepper to combine; add chorizo. Heat broiler.
  2. In 12-inch non-stick skillet over medium-high heat heat oil until shimmers. Add potatoes and cook 10 minutes, turning occasionally. Add onions and cook, flipping over potatoes occasionally, 5 minutes. Add 1/3 cup water, cover pan with lid or foil and continue to cook about 8 minutes, turning potato mixture occasionally, or until potatoes are fork-tender and golden.
  3. Pour egg mixture on top of potatoes, reduce heat to medium low. Cook about 4 minutes or until eggs are nearly set. Sprinkle with cheese and place under broiler 5 minutes until cheese is golden and eggs are set.
