Maple Buttercream Cookie Recipe

Something about maple flavor screams "fall food!" to me, so that was the inspiration behind these Maple Buttercream Cookies. A snap to make, these light and airy cookies with the deliciously sweet center are a perfect recipe to celebrate the season and cuddle up as the air turns brisk. Use the Maple Buttercream Frosting recipe as filler.

What you'll need

  • 2 and ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 and ½ cups, plus 2 tablespoons sugar
  • 2 large eggs
  • 2 teaspoons ground cinnamon
  • Maple Buttercream Frosting

How to make it

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine flour, salt, and baking powder and set aside.
  3. In a separate bowl combine butter and 1 and ½ cups sugar. Add in the eggs and mix. Then, add in the flour mixture and mix until it is fully incorporated. Although I do all this by hand, you can certainly use a mixer on medium speed.
  4. In a small bowl, stir together the last 2 tablespoons sugar and cinnamon.
  5. Using a small cookie scoop, scoop out the dough and place on greased cookie sheets, leaving two inches between each cookie. Sprinkle the top of each cookie with a bit of the cinnamon sugar mixture.
  6. Bake for 10 minutes (cookies will start to crack, but not brown when done).
  7. Let cookies cool on the cookie sheet for 5 minutes and then move them onto a wire rack to cool completely. While they are cooling, make your Maple Buttercream Frosting (recipe here).
  8. Once the cookies are completely cooled, pick up each cookie and spread a little Maple Buttercream Frosting on the bottom (flat side) of it. Affix a second cookie to the frosting. Voila!
