Mango Ice Pops

I may be (read: totally) obsessed with mangoes right now. It's probably the summer weather. Naturally, my obsession has me trying new recipes to see if I can't squeeze in a bit more mango into my life. These ice pops are hitting the spot. They're great on a hot summer day. The trick to keeping these pops sweet is using fully ripe mangoes.

What you'll need

  • 2 ripe mangoes
  • 1/2 cup orange juice
  • 1/2 cup coconut milk
  • honey

How to make it

  1. Blend mangoes, orange juice and coconut milk in blender until smooth. Taste. Add honey if the mixture needs more sweetness. Blend again.
  2. Pour mixture into popsicle molds. Freeze overnight.
  3. Pop out and enjoy!
