How to Roast Garlic

Don't let the thought of roasted garlic repel you, because I'll let you in on a little secret: when garlic is roasted, it turns sweet and becomes intensely enjoyable! Whenever I have the oven on for a long period of time, like when I'm roasting a chicken, I always throw a head of garlic in to roast. I keep it on hand in the refrigerator when I want to add a flavor boost to a dish, or simply make garlic bread. I like to think of it as a secret weapon. The flavor of roasted garlic is slightly sweet and savory and can make anything from a boring chicken breast to macaroni and cheese really pop.

What you'll need

  • 1 head of garlic
  • 1 teaspoon extra virgin olive oil
  • Special items needed: foil

How to make it

1. Preheat oven to 400°F. With a knife, slice the very top of the garlic head off, exposing the cloves. Place on a sheet of foil and drizzle garlic with olive oil. Wrap garlic in foil and place in the oven. Roast for 45 minutes.

2. Allow the garlic to cool slightly, then use your fingers to squeeze the base of the garlic head. The roasted cloves will pop out. Place the roasted garlic cloves in a bowl and mash with a spoon, if desired. Use roasted garlic on garlic bread, baked chicken breasts, pasta dishes, stews, dips and more.
