What you'll need
FOR THE BOX
- 1 roll of parchment paper
- 1 roll of cooking twine
FOR THE FISH
- 4 fillets of red snapper, tilapia fish or whatever fish you have around the house. Make sure the skin is off
- 8 oz of cherry tomatoes cut in half
- ½ cup of chopped kalamata olives
- 1 sliced lemon
- ½ cup caper
- 2 tablespoons olive oil
- Salt to taste
How to make it
- Place 4 pieces of parchment paper spread out on a work surface. On each piece, place a fish and spread all ingredients on top evenly over it.
- Gather all the sides of the parchment paper to form a pouch. Tie a piece of kitchen twine and tie in a knot.
- Do this for each. Place all of the pouches on a roasting tray in a 400-degree oven. Cook for 10-12 minutes unti the fish is cooked through until flaky. Cut the tie off of pouch and serve in origami squares that we prepared while the fish was cooking.
