Prep Time 15 minutes
This salad is bursting with flavor and texture: it's crunchy, sweet, juicy, tangy, rich and, thanks to a hint of curry powder, just a little bit mysterious. Of course, if your kids will object to the curry, feel free to omit it - but try sprinkling a bit on your own portion, or mix some into the leftovers for tomorrow's perfect mom lunch.
