Creamy Mashed Potatoes

This recipe would obviously be wonderful for St. Patrick's Day, but your kids will eat it up on any day!

What you'll need

  • 2 pounds red potatoes
  • 1/2 tablespoon salted butter
  • 3/4 - 1 cup reduced fat or low fat milk
  • salt and pepper

How to make it

  1. Fill a large pot with cold water. Set aside.
  2. Peel the potatoes, taking special care to remove any eyes. Rinse quickly under cool water.
  3. Cut the potatoes into a 1-inch dice. Add diced potatoes to the water.
  4. Set the pot over medium heat and cook the potatoes until fork tender, about 35 minutes. Drain well.
  5. Add the butter to the drained potatoes and stir. Let sit for a few minutes (so the butter begins to melt).
  6. Add 1/2 cup of milk to the pot. Use a potato masher to mash the potatoes with the butter and milk. Add the remainder of the milk 1/4 cup at a time, mashing together until the desired creamy texture is reached.
  7. Season with salt and pepper. Stir well to combine. Serve immediately.
