This recipe would obviously be wonderful for St. Patrick's Day, but your kids will eat it up on any day!

What you'll need
- 2 pounds red potatoes
- 1/2 tablespoon salted butter
- 3/4 - 1 cup reduced fat or low fat milk
- salt and pepper
How to make it
- Fill a large pot with cold water. Set aside.
- Peel the potatoes, taking special care to remove any eyes. Rinse quickly under cool water.
- Cut the potatoes into a 1-inch dice. Add diced potatoes to the water.
- Set the pot over medium heat and cook the potatoes until fork tender, about 35 minutes. Drain well.
- Add the butter to the drained potatoes and stir. Let sit for a few minutes (so the butter begins to melt).
- Add 1/2 cup of milk to the pot. Use a potato masher to mash the potatoes with the butter and milk. Add the remainder of the milk 1/4 cup at a time, mashing together until the desired creamy texture is reached.
- Season with salt and pepper. Stir well to combine. Serve immediately.
