Confetti Couscous Salad

This tasty couscous dish is healthy, savory and an especially easy dish for kids to enjoy.

What you'll need

  • 1/4 cup couscous
  • 1/2 cup hot vegetable broth
  • 2 tablespoons diced red bell pepper
  • 1/2 medium carrot, peeled and diced
  • 2 scallions, sliced
  • 1 tablespoon raisins
  • 1 1/2 tablespoon pine nuts, toasted


  • 1 tablespoon olive oil
  • 1 1/2 teaspoon lemon juice
  • 1/2 teaspoon honey
  • salt and freshly ground black pepper

How to make it

  1. Put the couscous into a bowl. Pour the broth over it and leave to stand for about 5 minutes or according to the package directions.
  2. Fluff up the couscous with a fork. Stir in the bell pepper, carrot, scallions, raisins, and pine nuts.
  3. Whisk together the dressing ingredients and stir into the couscous. Season to taste.
