Chocolate for breakfast? Yes please! When I lived in Italy I was thrilled to discover breakfast cereal with chunks of dark chocolate. Inspired by that special treat, I created this simple yet decadent granola. You might prefer to serve this up as a post-dinner snack, but I assure you it is delightfully delicious anytime of day.

What you'll need
- 4 cups of rolled oats
- 1 cup of hazelnuts, roughly chopped
- 1 cup dark chocolate chips
- 3/4 cup of brown sugar
- 1/3 cup of extra virgin olive oil
- 2 egg whites
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- salt
Variations:
Try different nuts, such as almonds or pecans. Use your favorite type of chocolate whether it be semi-sweet, milk, or even white. Add dried cherries for a fruity twist.
How to make it
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl whisk together egg whites and a pinch of salt. Then add oil, vanilla, and sugar until well combined.
- To the wet ingredients add the oats, nuts, and cinnamon. Stir to coat.
- Spread the mixture evenly on one large (or two smaller) parchment-lined baking sheet.
- Bake for 15 minutes, stir mixture and continue to bake 10 to 15 minutes more until golden and fragrant.
- Allow granola to cool. Once cool, evenly sprinkle with chocolate chips and store in an airtight container.
- Serve with cold or warm milk, yogurt, or even over ice cream. Or snack on it out of hand for a special treat anytime of day.
