These sturdy bars are perfect for lunchboxes and can even be individually wrapped and frozen for a freshly baked treat any time!!

What you'll need
- 1 1/4 cup all purpose flour
- 1 1/2 cups brown sugar, lightly packed
- 1 1/2 teaspoons baking powder
- 2 large eggs, whisked together
- 10 tablespoons salted butter, melted and slightly cooled
- 2 teaspoons vanilla extract
- 1/2 cup sweetened shredded coconut
- 1/2 cup semisweet chocolate chips
Helpful Tip:
These bars are easily customizable - feel free to sub in your favorite chips, nuts or candies.
How to make it
- Preheat oven to 350. Line an 8x8 or 7x10 pan with foil and lightly spray with vegetable oil spray. Set aside.
- In a large bowl, whisk together flour, brown sugar, and baking powder. Add beaten eggs, vanilla and melted butter and stir with a sturdy wooden spoon until combined. Fold in coconut and chocolate chips and spread batter evenly in prepared pan.
- Bake bars for about 30 minutes or until golden brown all over and a toothpick inserted in the center comes out clean. Cool on a rack until room temperature. For easier cutting, cover and refrigerate until serving. Remove entire foil from pan, peel away from bars, and cut into desired serving sizes.
