Chicken Pesto Quesadillas

Quesadillas have become a staple at our home. I serve it all the time, they are quick and easy and I can combine so many ingredients in them or just cheese and everybody stays satisfied. 

This recipe calls for cooked chicken strips which can be found at the grocery store and are a great help for those days that we are on the run (ahem, that would be lots of days!). I also keep a jar of pesto sauce in the fridge which can be used in many, many ways. It's very handy.

What you'll need

  • 4 flour tortillas
  • 1 cup of cooked chicken strips
  • 2 tablespoons of pesto sauce
  • 1 cup of a combination of shredded cheddar and Monterey Jack cheese

Helpful Tip:

Cut the tortilla with kitchen shears, it's easier!

How to make it

  1. Place the chicken strips on a small frying pan and heat them up with low heat. Mix them up while heating and add the pesto sauce, mix until the chicken is hot and the pesto is well distributed among the chicken.
  2. Place one tortilla on a heated pan, add cheese (1/4 of the total amount) to half of it and fold in half, let it warm in slow heat, turn so it's heated in both sides.
  3. Open up the tortilla still in the pan and add a quarter of the chicken and some spinach leaves (If your kids are picky with spinach just omit it). Close it up again and heat for one more minute until it's a little bit toasty. Take it out of the pan, cut in half and proceed with the next!
