Chicken BBQ Cheddar Pitas

Top pita halves with chicken, barbecue sauce and cheddar cheese for a quick busy-night dinner that will satisfy everyone. Add vegetable dippers and you're good to go with minimal fuss.

What you'll need

  • 6 pitas, 6-inch size, I use whole wheat
  • 1 pound shredded chicken
  • 1 cup shredded cheddar cheese
  • 3/4 to 1 cup barbecue sauce
  • 1/4 cup sliced green onion

Helpful Tip:

Use store-bought rotisserie chicken to reduce prep time.


Makes 12 half pitas


The green onions can be omitted for those who aren't fans.

How to make it

  1. Preheat oven to 400° F.
  2. Cut pitas in along edges with kitchen shears.
  3. Top each pita half with chicken, barbecue sauce, cheese and green onion.
  4. Set pitas on a cookie sheet and bake for 8 to 10 minutes or until cheese is melted and bubbly quick.
