Carrots steal the show in this easy-to-make cole slaw.
What you'll need
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1/3 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/4 teaspoon black pepper
- 4 cups grated carrot
- 1/4 cup chopped parsley
- 1/2 cup golden raisins
How to make it
- Combine olive oil, vinegar, mustard and salt and pepper in a small bowl.
- In another medium sized bowl, combine carrots, parsley and golden raisins. Pour dressing over carrot mixture and toss.
- Let chill for one hour. Toss again before serving.
