Rocky Road Graham Cracker Ice Cream Sandwiches

There's nothing like a sweet ice cream sandwich as a special treat! My daughter and I love making these easy homemade ice cream sandwiches together - especially on a hot summer day. Delicious and incredibly simple, these Rocky Road Graham Cracker Ice Cream Sandwiches are a great excuse to bring your kids in the kitchen!

What you'll need

  • 9 graham crackers
  • 2 pints chocolate ice cream
  • 1/2 cup mini marshmallows
  • 1/2 cup mini chocolate chips
  • 1/4 cup salted peanuts

Notes:

makes 9 ice cream sandwiches

How to make it

  1. Line a 9-inch square pan with foil extending over the sides. Break the graham crackers in half forming 18 squares. Line the pan with 9 graham cracker squares creating 3 rows.
  2. In a large bowl combine ice cream, marshmallows, chocolate chips, and peanuts. Stir quickly to avoid melting. If the mixture has melted significantly, place in the freezer to harden for 30 minutes.
  3. Pour the ice cream mixture on top of the graham crackers and spread evenly with a spatula. Place the remaining 9 graham crackers on top of the ice cream in the same manner as the graham crackers on the bottom. Place the pan in the freezer and freeze for at least four hours.
  4. Use foil handles to lift the sandwiches out of the pan. With a knife, cut in between the graham crackers creating 9 ice cream sandwiches. Serve immediately. Wrap remaining ice cream sandwiches seperately in foil or wax paper and store in the freezer.
