Roasted Chicken Pasta Toss

This recipe is easy to throw together, which makes it perfect for your next potluck gathering. Easy enough to make ahead of time and delicious served cold or at room temperature, that means you'll have plenty of time to enjoy your guests.

What you'll need

  • 1 pound pasta, any short cut style
  • 1/2 cup extra virgin olive oil
  • 1 cup basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups store bought rotisserie chicken breast, cut into 1/2-inch dice
  • 14 ounces mozzarella, cut into 1/2-inch dice
  • 1 cup grape tomatoes


Servings: 6

How to make it

  1. Prepare pasta al dente, according to package directions
  2. Place olive oil, basil, salt and pepper into the bowl of a food processor and process until smooth, about 1 minute. Pour mixture into a large bowl. Add in pasta, chicken, mozzarella and grape tomatoes. Toss gently to coat. Serve warm or refrigerate overnight and serve the next day.
