Mocha Peppermint Cupcakes Recipe

Don't look now, but the holidays will be here really, really soon. Now, the question is… what will you be cooking? These Christmas cupcakes are perfect for your annual holiday bash because they are a kid-friendly dessert (older kids ONLY)for the holidays that has a sophisticated and decadent adult appeal. These Mocha Peppermint Cupcakes are definitely the way to go, come Christmastime.

What you'll need

1 box chocolate cake mix (and accompanying ingredients)

1 tube instant coffee (recommended: Starbucks Via)

1 batch Peppermint Buttercream Frosting

2 candy canes, crushed

Helpful Tip:

Out of instant coffee? You can substitute strong brewed coffee for whatever water the cake mix calls for, infusing the same mocha flavor into the cake. Then you don't need the instant coffee at all. Want to take these cupcakes a step further? Top the frosting with chocolate ganache. It's fabulous. Making these for kids? Use decaf instant coffee.

How to make it

1. Preheat oven according to cake mix package directions. Line 24 cupcake tin opens with paper liners. Set aside.

2. Prepare the cake mix according to package directions, adding the instant coffee to the batter. Stir well to combine.

3. Divide the batter evenly among the cupcake liners; each should be about 2/3 full.

4. Bake the cupcakes according to the package direction. Once done, remove from the oven and let cool completely.

5. Frost the cooled cupcakes with the Peppermint Buttercream Frosting. Sprinkle with crushed candy canes.

6. Serve immediately.
