Frozen-Inspired Blackberry-Raspberry Granita with Vanilla Whipped Cream

You don’t need Elsa’s magic powers to create a lovely icy treat! Using fruit, juice, sugar and water you can prepare a sweet cool dessert to help relieve the dog days of summer.

What you'll need

  • 2 cups fresh blackberries
  • 1 cup fresh raspberries
  • 1 cup water
  • ½ cup sugar
  • 1 tablespoon fresh lemon juice
  • 13” by 9” baking pan with a 2” high edge
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

How to make it

  1. To make the granita: In a blender, combine blackberries, raspberries, water, sugar, and lemon juice. Puree mixture until smooth.
  2. Pour your mixture through a fine mesh sieve into the baking pan, pushing the juice through the sieve with a spoon as you go.
  3. Place the pan in the freezer.
  4. After 1 hour, take the pan out of the freezer and begin to scrape and break up the ice forming with a fork. Put the pan back in the freezer.
  5. Continue to do this every 30-60 minutes until the mixture is completely frozen and resembles crumply ice chips.
  6. Keep in the freezer until ready to serve.
  7. To make the vanilla whipped cream: Pour the heavy whipping cream into a mixer along with 1 tablespoon of sugar (sugar is optional) and 1 teaspoon of vanilla extract.
  8. Whip on high until the whipped cream forms stiff peaks.
