What you'll need
- 2 cups fresh blackberries
- 1 cup fresh raspberries
- 1 cup water
- ½ cup sugar
- 1 tablespoon fresh lemon juice
- 13” by 9” baking pan with a 2” high edge
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
How to make it
- To make the granita: In a blender, combine blackberries, raspberries, water, sugar, and lemon juice. Puree mixture until smooth.
- Pour your mixture through a fine mesh sieve into the baking pan, pushing the juice through the sieve with a spoon as you go.
- Place the pan in the freezer.
- After 1 hour, take the pan out of the freezer and begin to scrape and break up the ice forming with a fork. Put the pan back in the freezer.
- Continue to do this every 30-60 minutes until the mixture is completely frozen and resembles crumply ice chips.
- Keep in the freezer until ready to serve.
- To make the vanilla whipped cream: Pour the heavy whipping cream into a mixer along with 1 tablespoon of sugar (sugar is optional) and 1 teaspoon of vanilla extract.
- Whip on high until the whipped cream forms stiff peaks.
