Fried Egg, Avocado and Feta Quinoa

Some days, I can really put together a great dinner. I start early and when dinner time rolls around, I can put something great on the table with minimal stress. 

Unfortunately, that's not every day. And on those days when I haven't thought about dinner until about ten minutes before mealtime, this is my kind of dinner. 

Quinoa cooks up super quickly and while it's cooking, you can fry the eggs, chop up the avocado, and voila! Dinner is served in fifteen minutes.

What you'll need

  • 1 cup uncooked quinoa
  • 2 cups water
  • 3 Tablespoons olive oil
  • 3 Tablespoons white wine vinegar
  • 3 cloves garlic, minced
  • 2 green onions, thinly sliced
  • Salt and Pepper
  • 1/4 cup cilantro, chopped
  • 4 eggs
  • 1/2 cup feta
  • 1 avocado, sliced

Notes:

Serves 4

How to make it

  1. In a pot, bring the water and quinoa to a boil, stir and cover. Reduce heat to simmer and let cook for 15 minutes. 
  2. Meanwhile, whisk together the olive oil, vinegar and garlic and set aside. Fry up the eggs (I like mine to still have a slightly runny yolk). 
  3. When the quinoa is done cooking, fluff with a fork, then stir in the oil/vinegar/garlic mixture and salt and pepper to taste. Add the cilantro and green onions. Divide between four bowls or plates. 
  4. Sprinkle the feta over the quinoa, then top with avocado slices, and finish with the fried egg. Serve immediately.
