I made this as a special dinner recently and my toddler looked at her plate, wide-eyed, and said, "We're having chocolate for dinner?!"
Needless to say, it was a huge hit.
It's perfect for a fun breakfast, and amazingly simple to assemble.

What you'll need
- 4 thick slices of french bread
- 1/2 cup peanut butter
- 2 eggs, beaten
- 1/2 cup milk
- 2 teaspoons vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 2 bananas, sliced
- Chocolate sauce for drizzling
- Powdered sugar, optional
Variations:
For an extra-sweet filling, beat the peanut butter with a few Tablespoons of powdered sugar, then add milk to reach a spreadable consistency.
How to make it
- Slice each piece of bread half way through so it has a pocket. Fill each pocket with peanut butter and set aside.
- Whisk together the eggs, milk, vanilla and spices in a baking dish and soak the stuffed bread slices in it, turning after 3-5 minutes so both sides are coated.
- Heat a skillet to medium-heat and cook the bread slices until browned on each side. Transfer to plates and top with sliced bananas and drizzle with chocolate. Dust with powdered sugar if desired and serve immediately.
