What you'll need
Cookies
- 1 box chocolate cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1/2 cup water
Frosting
- 2 sticks salted butter, slightly softened
- 10 oz jar maraschino cherries
- 1 teaspoon vanilla extract
- 4 cups powdered sugar

Makes about two dozen whoopie pies
How to make it
- Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
- In the bowl of a mixer, combine cake mix, eggs, oil, and water. Mix on medium low speed until combined. Place small spoonfuls of batter (I used a small cookie scoop) on lined baking sheet, several inches apart - they spread a lot!! Bake for about 7 minutes, until edges are set and centers spring back when lightly touched. Remove from oven and let cool on baking sheet for a few minutes. Remove to wire rack to finish cooling.
- Prepare frosting: Drain cherry juice from jar and set juice aside. Coarsely chop cherries. In the bowl of a mixer, beat butter, vanilla, and four Tablespoons of maraschino cherry juice (from the jar) until smooth. Slowly add four cups of powdered sugar and beat on low until just barely mixed. Mix frosting on medium high for about a minute. Add cherries, increase speed to high, and beat for about 30 seconds. Frost cookies generously, then top with another cookie.
