Chewy Peanut Butter and Chocolate Granola Bars

Hold the phone! This has to be one of the simplest, easiest, and most delicious recipes for a granola bar I've had. We make granola bars a lot here. I have a husband who runs ultra trail marathons and a growing child who seems to never stop eating. Snacks, preferably healthy, are a must in my house and I was growing tired of always taking an hour or two to make granola bars. So, one day, instead of waiting for everything to magically happen on the stove and in the oven, I threw the ingredients into the microwave and in minutes I had granola bars!

Chewy, sweet, and packed with protein, these quick and easy chewy peanut butter granola bars are the perfect snack for a house on the run.

What you'll need

  • 2 cups rolled oats
  • 1 cup puffed brown rice cereal
  • 1 cup peanut butter, sugar-free preferred
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup dark chocolate chunks
  • Special items needed: foil or parchment paper and 8"X8" pan

Notes:

Makes 8 large rectangular bars or 16 small square bars.

How to make it

  1. Line an 8"x8"x2" pan with foil or parchment paper making sure to leave enough foil to hang over the edges.
  2. In a large bowl, combine oats and rice cereal; stir.
  3. In another bowl, combine peanut butter, honey, sugar, and salt; stir. Place in the microwave and microwave for 1 minute. Stir and microwave for another 30 seconds.
  4. Pour the peanut butter into the oats and stir to combine. Fold in the chocolate chunks. Pour mixture evenly into prepared pan. Cover with another sheet of foil or paper and press the granola hard into the pan to compress. Place in the refrigerator for at least 10 minutes to set - the longer the better. Carefully remove the granola by lifting the excess foil like handles and lifting the granola out of the pan. Set on a work surface and slice into bars using a knife. Store the granola bars in an air-tight container in the refrigerator.
