When school is in session and my family is running around with our hectic schedules, I need an arsenal of simple and quick meals! It's a war out there people and I only have one child! I can't even imagine all of the rushing about a family of six has to endure. This baked chicken recipe is one of my favorite recipes to make during the weekday. I make an extra large batch to have leftovers for salads, tacos, and sandwiches. Super delicious, this slightly sweet chicken is pleasing to everyone's taste buds and takes me 5 minutes to prep and 20 to bake! Serve it alongside buttery rice or pasta, a nice salad, and dinner is on the table in a flash.

What you'll need
- 2 1/2 tablespoons light brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 6 chicken breasts
Notes:
makes 6 servings
How to make it
- Preheat oven to 425°F.
- In a bowl stir to combine sugar, paprika, cumin, salt, pepper, oregano, and garlic powder.
- Coat each chicken breast thoroughly with this sugar/spice rub and place on a rimmed baking sheet. (For a better flavor, place the spiced rubbed chicken breasts in a sealable plastic food storage bag and place in the refrigerator for 30 minutes to overnight). Place in the oven and bake for 20-22 minutes until cooked through. Serve.
