Blackberry and Ricotta Pita Pizza

I'm always looking for healthy and creative snacks for my family. The same old pretzels and peanut butter get boring fast. Just the other day my daughter was whining about wanting a snack that wasn't peanut butter. I asked her if she could have anything that was healthy, what would it be? Her answer, fruit pizza.

Her idea of fruit pizza is a slice of pita bread with honeyed cream cheese and fresh fruit. Unfortunately, we were out of cream cheese so I opted for an even healthier ricotta cheese. Of course, it doesn't have the same creamy texture as cream cheese but it would work just as well. 

After putting on her chef’s hat and apron, because she has to get dressed up to cook, she went to work. With a little help from me, she had a healthy snack that was not only absolutely delicious but gorgeous as well. She even went outside to the garden and grabbed some mint because "mint makes her mouth tingly and it's funny." She melts my heart with her quirkiness. According to her it was better than my previous fruit pizza version making her, in her own words, "expert head chef." I've been demoted.

Fresh, healthy, and delicious, this Blackberry and Ricotta Pita Pizza is a quick snack or even dessert that kids can help make.

What you'll need

  • 1 whole wheat pita bread
  • 3 tablespoons ricotta
  • 6 to 8 blackberries
  • 1/2 tablespoon honey
  • 1 teaspoon fresh mint, chopped

Notes:

makes 1 pita pizza

How to make it

  1. Preheat oven to 400°F. Place the pita on a baking sheet and place in oven. Bake for 10 minutes until toasted. Remove the pita to a work surface.
  2. With a spoon or knife, evenly spread the ricotta on the pita. Top with blackberries. Place the pita back onto the baking sheet and bake for 5 minutes. Remove from the oven, drizzle the pita pizza with honey, and garnish with mint. Slice and serve.
