Leftovers are a fact of life, especially post-Holidays. Use up your leftover ham with a few pantry staples for a delicious and quick meal. Make it as spicy or mild as you like by adding more or less red pepper flakes.

What you'll need
- 2 tablespoons cooking oil
- 1 cup diced onions
- 1 cup diced tri-color peppers, 1/3 cup of each
- 2 cloves garlic, minced
- 2 cups cooked and cubed ham
- 1/2 cup chicken stock
- 1 bay leaf
- 2 cans (15 ounces each) black beans, drained well
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 4 cups hot cooked rice
Notes:
Yield: Serves 4
How to make it
- Heat oil over medium-high heat in a heavy bottomed pot. Add onions, peppers and garlic and cook until vegetables start to "sweat" or leach their juices.
- Add ham, chicken stock and bay leaf. Stir well.
- Add in beans and seasonings. Simmer for 20 minutes on low.
- Remove bay leaf and serve over hot cooked rice.
