Black Beans and Ham

Leftovers are a fact of life, especially post-Holidays. Use up your leftover ham with a few pantry staples for a delicious and quick meal. Make it as spicy or mild as you like by adding more or less red pepper flakes.

What you'll need

  • 2 tablespoons cooking oil
  • 1 cup diced onions
  • 1 cup diced tri-color peppers, 1/3 cup of each
  • 2 cloves garlic, minced
  • 2 cups cooked and cubed ham
  • 1/2 cup chicken stock
  • 1 bay leaf
  • 2 cans (15 ounces each) black beans, drained well
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 4 cups hot cooked rice

Notes:

Yield: Serves 4

How to make it

  1. Heat oil over medium-high heat in a heavy bottomed pot. Add onions, peppers and garlic and cook until vegetables start to "sweat" or leach their juices.
  2. Add ham, chicken stock and bay leaf. Stir well.
  3. Add in beans and seasonings. Simmer for 20 minutes on low.
  4. Remove bay leaf and serve over hot cooked rice.
