A great way to use leftover chicken for a lunch treat for mom, dad and the kids.
What you'll need
- 1 (8-ounce) boneless, skinless chicken breast
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 teaspoon olive oil
- 1/3 cup prepared barbecue sauce
- 1-1/2 cups prepared coleslaw mixture
- 1/4 cup mayonnaise
- 1 teaspoon cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 potato hamburger buns
Helpful tip
Cooked rotisserie chicken breasts or sliced chicken cold cuts can be used instead of cooking chicken. If using cooked chicken, then skip step 1.

How to make it
- Season chicken with salt and pepper. In a small skillet on medium high heat, heat oil until shimmers. Cook chicken about 11 minutes, turning once, or until cooked through.
- Combine chicken with barbecue sauce.
- In a medium bowl mix coleslaw mixture, mayonnaise, vinegar, sugar, salt and pepper to combine.
- Divide chicken and coleslaw between buns.
