In no time have breakfast prepped and in the oven! This giant, fluffy pancake is made in the blender and baked in the oven for a delicious breakfast in a snap.

What you'll need
- 2 tablespoons unsalted butter
- 3 eggs
- 3/4 cup milk
- 1/2 cup flour
- 1/4 cup light brown sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 1 banana, peeled and sliced into 1/4 inch slices
- maple syrup for serving

How to make it
- Preheat oven to 425°F. In a medium cast iron or non-stick skillet, melt butter over medium-low heat. Set aside.
- Combine eggs, milk, flour, light brown sugar, vanilla, and salt in a blender and blend until foamy, about 1 minute.
- In a small bowl, combine sugar and cinnamon. Pour batter into the skillet and evenly top with banana slices and cinnamon/sugar mixture. Place skillet into the oven and bake for 20 minutes until golden and puffy.
- Slice and serve with maple syrup.
