Avocado and Pesto Panini

Pesto is an ingredient I always like to keep in stock because it can be used to create so many yummy dishes in just minutes. In this panini, it blends really well with the rest of the ingredients and it allows the avocado to shine too.

Make your own pesto with basil, pine nuts, and olive oil and save it in the refrigerator for up to to 3 weeks You can follow this pesto recipe. There are also great store-bought pestos in a jar you can use.

What you'll need

  • 4 wheat rolls
  • 1/4 cup of pesto
  • 8 oz of mozzarella cheese sliced
  • 3 roma tomatoes
  • 1 avocado sliced

How to make it

  1. Cut the wheat rolls in half and pre-heat them on a pan so that the insides get a little bit toasted.
  2. Spread some pesto on one of the bread halves. Then add about 3 slices of cheese and tomatoes. Add avocado slices and top the panini. Reapeat with the other 3 rolls.
  3. Place the sandwiches in a panini press and heat until the sandwich is crispy and flat. If you don't have a panini press, you can make these with a regular pan, just press by placing a small oven tray with cans (to make it heavy!) on top of the sandwich and you will still have a great panini!
