Can you ever have too much bacon? Probably. Is the bacon trend on it's way out the door? Most definitely. Can we have too many bacon recipes in the world? Inconceivable! So, here's another delectable bacon delight to add to your collection! Sweet and savory, these Apple Bacon Mini Muffins are pop-in-your-mouth delicious and obnoxiously addictive.

What you'll need

  • 1 1/3 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup apples, cored and diced
  • 3/4 cup light brown sugar, packed
  • 3/4 cup milk
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 6 pieces of bacon, cooked and chopped

How to make it

  1. Preheat oven to 375°F. Grease a mini muffin tin with cooking oil pray or butter. Set aside until needed.
  2. In a large bowl, mix to combine flour, baking powder, and salt.
  3. In another bowl, stir to combine apples, sugar, milk, butter, egg, and vanilla. 
  4. Poor the wet ingredients into the dry and stir until just combined. Gently fold in bacon. 
  5. Scoop batter into the prepared mini muffin tin. Place in the oven and bake for 12 to 15 minutes or until a toothpick inserted in the center of one muffin comes out clean. Carefully remove the muffins from the tin and allow to cool slightly before serving.
