Ingredients
- 2/3 cup peeled and finely diced cucumber
- 1 cup plain yogurt, stirred until smooth
- 1 small clove garlic, minced
- 2 tablespoons chopped mint (about 8 to 10 sprigs)
- 1 1/2 tablespoons olive oil
- 1/4 teaspoon salt
- Pepper to taste
Instructions
- Combine all the ingredients in a mixing bowl and stir well.
- Cover with plastic wrap and chill until ready to serve. Serve with toasted pita, carrots, celery, or chicken strips. Makes 1 1/2 cups.
