Ingredients
- 1 egg white
- 1 tablespoon reduced-sodium soy sauce
- 1-1/2 teaspoons toasted sesame oil
- 1 teaspoon dry sherry
- 1 teaspoon cornstarch
- 1/2 teaspoon sugar
- 1/4 teaspoon kosher salt
- 1/4 cup canned water chestnuts (drained), finely minced
- 2 tablespoons finely minced scallions
- 1 teaspoon finely minced fresh ginger (or more, according to taste)
- 3/4 pound shrimp, peeled, deveined, and tails removed
- 24 round dumpling wrappers or wonton skins
Instructions
- Whisk together the egg white, soy sauce, sesame oil, sherry, cornstarch, sugar, and salt in a medium-size bowl. Stir in the water chestnuts, scallions, and ginger.
- Coarsely chop half of the shrimp. Finely mince the remaining shrimp by hand, or pulse them briefly in a food processor. Stir the chopped and minced shrimp into the mixture.
- Follow the directions for stuffing the dumplings and cooking them. Makes two dozen.
