Shrimp Dumplings

Water chestnuts provide a crunchy contrast to the shrimp's delicate texture and flavor.

Ingredients

  • 1 egg white
  • 1 tablespoon reduced-sodium soy sauce
  • 1-1/2 teaspoons toasted sesame oil
  • 1 teaspoon dry sherry
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sugar
  • 1/4 teaspoon kosher salt
  • 1/4 cup canned water chestnuts (drained), finely minced
  • 2 tablespoons finely minced scallions
  • 1 teaspoon finely minced fresh ginger (or more, according to taste)
  • 3/4 pound shrimp, peeled, deveined, and tails removed
  • 24 round dumpling wrappers or wonton skins

Instructions

  1. Whisk together the egg white, soy sauce, sesame oil, sherry, cornstarch, sugar, and salt in a medium-size bowl. Stir in the water chestnuts, scallions, and ginger.
  2. Coarsely chop half of the shrimp. Finely mince the remaining shrimp by hand, or pulse them briefly in a food processor. Stir the chopped and minced shrimp into the mixture.
  3. Follow the directions for stuffing the dumplings and cooking them. Makes two dozen.
